CRISPY SPINACH BAKE 
1 lb. clean, washed spinach leaves
1 minced clove garlic
1/2 stick butter
1/4 c. Parmesan cheese
Juice of 1/2 lemon
1 c. bread crumbs
Black pepper

Lightly steam spinach. Melt butter in skillet and saute garlic briefly. Drain spinach well and toss with lemon juice and pepper. Grease a 1 quart casserole dish and alternate layers of spinach, cheese and bread crumbs, topping generously with crumbs. Pour melted garlic butter over top and bake at 350 degrees for 30 minutes.
