EASY SWEET 'N SOUR CHICKEN 
1 fryer chicken
1 sm. can crushed pineapple
2 tbsp. cornstarch
3/4 c. sugar
1/2 c. soy sauce
1/4 c. vinegar
1 clove garlic (optional)
1/4 tsp. pepper
1/2 tsp. ginger

Place chicken (cut up) in greased, shallow pan. Drain pineapple. Combine juice with cornstarch, sugar, soy sauce, vinegar, and spices. Cook over medium heat, stirring constantly, until sauce thickens. Then add reserved pineapple. Spoon over chicken. Cover with lid or foil. Bake 1 1/2 hours at 350 degrees or 2 hours at 325 degrees.
