JULIENNE OF BLACKENED CHICKEN BREAST
WITH FRESH VEGETABLE SALSA
 
4 (7 oz.) boneless chicken breast
4 tbsp. Cajun seasoning
1 tomato
1 bunch green onions
2 cloves garlic, chopped fine
1/2 zucchini
1/2 yellow squash
1 green bell pepper
1 red bell pepper
1/2 tsp. Worcestershire sauce
Few drops Tabasco sauce
Salt & white pepper to taste

Sprinkle Cajun seasoning on chicken. Place in hot sauce pan with tablespoon vegetable oil. Cook until black on seasoned side and then turn over. Turn down heat and cook until done (cover if necessary).

Take all vegetables, cut into small diced pieces and combine ingredients. Mix and set aside. This can be done a day or two in advance. The flavors will blend together. When chicken is done, cut into strips and serve over a portion of the vegetable salsa. Serve salsa cold.

Serves 4.
