PAN FRIED CHICKEN 
2 t 3 lbs. cut up frying chicken
6 tbsp. flour
1 1/2 tsp. salt
1 tsp. paprika
1/2 tsp. pepper
Oil

Roll chicken in dry mixture. Heat oil in heavy skillet. Brown chicken on both sides. Lower heat and cover. Fry slowly for about 30 minutes. Uncover and fry for 10 minutes to recrisp skin. You can make gravy in the pan after the chicken is taken out. Serves 6-8.
