|SHERRY'S GODDESS POTATO SALAD|
2 lbs red potatoes, quartered
1/3 cup light mayonnaise
1/3 cup light sour cream
2 tbsp. red wine vinegar
3/4 tsp. sugar
3/4 tsp. salt
1/2 tsp. pepper
1/2 cup chopped assorted fresh herbs, like parsley, chives, dill and tarragon
2 ribs celery, sliced
2 scallions, sliced
In a medium pot, combine potatoes with enough salted water to cover. Bring to a boil, cook until just tender, about 10 minutes. Drain, rinse under cold water, drain.
In a large serving bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper until blended.
Stir in herbs. Add potatoes, celery and scallions. Toss to coat.
