SWEET POTATO AND CASHEW BAKE 
2 lb. sweet potatoes, cooked, peeled, and cut into thick chunks
1/2 c. packed brown sugar
1/3 c. broken cashews
1/2 tsp. salt
1/4 tsp. ground ginger
1 (8 oz.) can sliced peaches, drained (cut pieces in halves)
3 tbsp. butter

Combine brown sugar, cashews, salt, and ginger. In medium baking dish, layer half of potatoes, half of peach slices, then half of sugar mixture. Repeat layers; dot with butter. Bake covered for 25 minutes in 350 degree oven. Uncover; bake 10 more minutes. Spoon brown sugar mixture over potatoes before serving. Excellent with ham or turkey.
