SALMON PEA WIGGLE 
2 tsp. butter
2 tsp. flour
1/4 tsp. salt
1/4 tsp. pepper
1 c. milk
1 can salmon
1 pkg. frozen peas

Melt butter over low heat in heavy saucepan (wooden spoon). Blend in flour, seasonings. Cook over low heat, stirring constantly until smooth, bubbly. Remove from heat. Stir in milk. Bring to boil, stirring constantly. Boil 1 minute. Flake and bone salmon. Cook and drain peas. Add to sauce, stirring occasionally while cooking over low heat. Serve on saltines or toast.
