ONE BOWL PINEAPPLE CAKE 
2 egg whites, beaten
20 oz. can crushed pineapple
2 c. flour
1 c. granulated sugar
1 c. brown sugar
2 tsp. baking soda

In large bowl, beat 2 egg whites until light. Add contents of 20 oz. crushed pineapple, undrained. Add 2 cups flour, 1 cup granulated sugar, 1 cup brown sugar and the 2 teaspoons baking soda. Mix by hand. NO BEATING.) Pour into greased and floured 9x13 inch pan. Bake at 350 degrees for 45 to 50 minutes. This is a moist cake.

Frost with Cream Cheese Ginger Frosting. In small mixer bowl, beat 3 oz. package Philadelphia cream cheese, add 1/4 cup of butter and 1 teaspoon vanilla, 2 cups powdered sugar and 1/2 teaspoon ginger. Beat until smooth.
