|ISLAND BROILED CHICKEN|
1/2 c. salad oil
3 tbsp. lemon juice
1 1/2 tbsp. soy sauce
1 sm. clove garlic, minced
1/2 tsp. dried oregano, crushed
1/4 tsp. salt
1/8 tsp. pepper
2 (2 lb.) ready to cook broiler-fryer chickens, cut in half
Combine salad oil, lemon juice, soy sauce, garlic, oregano, salt, and pepper for marinating sauce. Seal chicken and sauce in plastic bag. Marinate in refrigerator 4-5 hours, turning several times.
Place skin side down in broiler pan (without rack). Broil 5-7 inches from heat about 25 minutes or until lightly browned. Brush occasionally with sauce. Turn; broil 15-20 minutes. Serves 4.
