DIABETIC OATMEAL COOKIES 
3 tbsp. diet butter
2/3 c. non-fat dry milk
4 tbsp. raisins
1/2 tsp. baking soda
1 tsp. cinnamon
2 tbsp. vanilla
1 lg. mashed banana
1 tsp. baking powder
1/2 tsp. cream of tartar
1 1/2 tsp. brown sugar substitute
2 tbsp. lemon juice
1 1/2 c. quick rolled oats

Mix all above ingredients. Drop by spoonfuls onto cookie sheet and bake at 375 degrees for 10 to 12 minutes.

Note: If you chill dough, it turns out better cookies.
