OLD FASHIONED CANDIED YAMS 
4 c. peeled and sliced sweet potatoes
1/2 c. water
1/2 c. sugar
1/2 c. firmly packed light brown sugar
1/3 c. butter

Combine all ingredients in an iron skillet. Bring to a boil. Reduce heat and simmer, covered, about 15 minutes or until potatoes are tender. Remove the cover, increase the temperature to medium and cook until the syrup has thickened, possible another 15-20 minutes.
