2 lb. sausage
2 med. potatoes
1 med. onion
1 bell pepper
Garlic salt to taste
Black pepper to taste
5 to 6 eggs, beaten
1 lb. Velveeta cheese, cut into squares
Chop potatoes, onion, bell pepper.
Cook first seven ingredients slowly. Drain as mixture cooks. Add eggs and cheese, cook eggs until done.
Add salsa or picante sauce to taste.
Serve plain or with tortillas.
