LOUISIANA SQUASH CASSEROLE 
8 med. yellow squash
5 green onions & tops, chopped
1 stick butter
1 egg, beaten
36 Bacon Thins (crackers), crumbled
Olives, sliced (green stuffed olives may be used)
Salt (to taste)
Pepper (to taste)

Slice, boil and drain squash. Saute green onions in butter. Add salt, pepper and egg. Mix in cracker crumbs. Place in greased 2-quart casserole. Top with more cracker crumbs and sliced olives. Bake at 350 degrees for 30 minutes. Serves 5 to 6.
