COFFEE CAKE WITH STREUSEL TOPPING 
1/2 cup all-purpose flour
1 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup sour cream
1/2 tsp. vanilla extract
2 eggs

STREUSEL TOPPING:

2 tbsp. flour
2 tbsp. unsalted butter
2 tbsp. sugar
3 tbsp. brown sugar

Preheat oven to 350F.

Combine all ingredients in a mixer and mix until all ingredients are incorporated. Do not overmix. Pour batter into a 9-by-9-inch lightly greased cake pan, and cover with streusel topping.

Bake for about 20 minutes or until done.

STREUSEL TOPPING: Place all ingredients together in a mixer and mix until crumbled.

Servings: 10
