HOT LETTUCE DRESSING 
1/2 lb. bacon
2 tbsp. flour
1 c. water
1/2 c. sugar
1/4 c. vinegar

Cut bacon into small pieces and brown in a heavy skillet. Stir in flour. Add water, sugar and vinegar. Cook slightly to thicken. Pour over lettuce that has been torn into bite-size pieces. Let set for a minute to wilt the lettuce. Serve hot. This was always a special treat when served with hog stomach.

VARIATION:

6 slices bacon, diced
1/2 c. water
4 tbsp. sugar
4 c. shredded lettuce
1 sm. onion, minced
Salt & pepper
