2 lbs. of alligator tail, ground
2 tsp. of salt
1 tsp. red pepper
1 egg, beaten
1/4 c. milk
1/2 c. bread crumbs
Juice of one lemon
1/2 c. chopped green onions
2 tbsp. chopped parsley
1 c. flour
1 c. cornmeal

Mix alligator with salt, red pepper, egg, milk, bread crumbs, lemon juice, green onions and parsley. Shape into small balls.

Mix flour and cornmeal; roll alligator meatballs in mixture and fry in deep fat at 350 degrees until brown.
