BAKED HADDOCK CASSEROLE 
Can use any type of white fish.

2 lbs. fish fillets
2 tbsp. lemon juice (or cooking sherry)
1/4 c. butter, melted
4 slices American cheese

CRUMB TOPPING:

Mix together:

1 stack Ritz crackers, crushed
1/4 c. melted butter

Cut fish into serving pieces, sprinkle with salt and pepper. Mix lemon juice or sherry with melted butter and dip fish in butter mixture. Place in greased baking pan, pour remaining butter mixture over fish. Tear cheese into small pieces and put over fish. Put cracker crumb mixture over fish and bake at 350 degrees, uncovered, for 25 to 30 minutes.
