CHOCOLATE CHIP ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 c. flour
1 tsp. salt
1 tsp. vanilla
2 oz. sq. unsweetened chocolate
1 c. oil
1 tsp. cinnamon
1 tsp. baking soda
2 c. grated zucchini
1/2 c. chocolate chips
1 c. nuts, chopped (optional)

In a large bowl, beat eggs until light. While still beating, add sugar, oil and vanilla. Stir in melted chocolate and zucchini. Add flour, baking soda, salt and cinnamon. Add this gradually to zucchini mix, stirring well after each addition. Stir in nuts and chocolate chips. Divide batter into 2 greased and floured 9 x 5 inch loaf pans OR 5 mini loaf pans. Bake at 350 degrees for 1 hour (minis for 55 minutes or until tests done.)
