GROUND BEEF & CABBAGE CASSEROLE 
3 lbs. lean ground beef
4 c. rice, cooked
2 tbsp. butter
2 lg. green peppers
2 lg. onions
1 tsp. salt
1 tsp. pepper
2 lg. heads of cabbage
2 lg. cans crushed tomatoes

Cut out core of cabbage and steam cabbage just until soft. Cook rice. Saute green pepper and onion in butter until onion is yellow. Mix first 7 ingredients while rice and vegetables are still very warm.

In a large 9"x13" pan place a layer of steamed cabbage, then a layer of meat and rice mixture, then spread crushed tomatoes over meat and rice mixture. Continue layering until all ingredients are used. Top with cabbage and bake at 300 degrees for about 2 hours.
