SWEET POTATO NUT CASSEROLE 
3 c. cooked mashed sweet potatoes
1/2 c. sugar
2 beaten eggs
1/2 tsp. salt
1/4 c. butter, melted
1/2 c. milk
1 1/2 tsp. vanilla extract
1/2 c. firmly packed brown sugar
1/3 c. all purpose flour
1 c. chopped nuts
3 tbsp. melted shortening

Combine potatoes, sugar, eggs, salt, butter, milk and vanilla. Spoon into 1 to 1 1/2 quart baking dish. Combine brown sugar, flour, nuts, 3 tablespoons butter. Spread this last mixture over sweet potato mixture. Bake at 350 degrees for 35 minutes.
