1 lb. ground nuts (walnuts or pecans)
12 egg yolks
2 1/2 c. powdered sugar
1 tbsp. fine bread crumbs
1/2 tbsp. vanilla
12 egg whites

Beat egg yolks and vanilla until thick. Gradually add sugar and beat well until thick. Stir in the ground nuts. Fold in beaten egg whites alternately with bread crumbs. Bake at 320 degrees for 1 hour.


2 whole eggs
1 egg yolk
6 tbsp. sugar
8 tbsp. strong coffee

Beat eggs and egg yolk together then add sugar and coffee. Put in double-boiler and stir until it thickens. Water should be hot, but no boiling. Do NOT overcook or it will curdle. Cool. Add 1/2 pound unsalted butter and beat until creamy and smooth. Spread between layers and on top.
