FRENCH-FRIED CARROTS 
1 lb. carrots, sliced 1/4 inch thick
1 c. pancake mix
1 c. milk
1 egg
1 tbsp. oil
Oil for frying

Combine pancake mix, milk, oil and egg. Dip carrot slices in batter and fry in deep fat.
