LIGHT AND FLUFFY PIE 
1 (3 oz.) pkg. Jello, any flavor
2/3 c. boiling water
2 c. ice cubes
3 1/2 c. thawed Cool Whip, whipped topping
1 c. diced fresh or canned fruit, drained & diced
9 inch prepared graham cracker crumb crust

Dissolve gelatin completely in boiling water, stirring about 3 minutes. Add ice cubes and stir constantly until gelatin is thickened about 2 to 3 minutes. Remove any unmelted ice. Using wire whip, blend in whipped topping then whip until smooth. Fold in fruit and chill if necessary until mixture will mold. Spoon into pie crust. Chill 2 hours. Garnish as desired.
