YELLOW SQUASH BREAD 
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 tsp. cinnamon
2 eggs
3/4 c. sugar
1/2 c. vegetable oil
2 tsp. vanilla
1 1/3 c. shredded squash

Combine first 5 ingredients, set aside. Combine eggs, sugar, oil and vanilla in large bowl; beat well. Stir in squash. Add dry ingredients, stirring just until moistened. Pour batter into a greased and floured loaf pan. Bake at 350 degrees for 50 minutes or until wooden toothpick inserted in center comes out clean. Yields 1 loaf.
