OVERNIGHT LAYERED LETTUCE SALAD 
1 head of lettuce, broken into bite size pieces
1/2 c. chopped celery
1/2 c. chopped green pepper
1 sm. red onion, chopped
1 (10 oz.) pkg. frozen peas, thawed
1 (8 1/2 oz.) can water chestnuts, drained & sliced
1 c. thinly sliced radishes
1 c. mayonnaise or salad dressing
1 c. grated Parmesan cheese
6 slices of crisp fried or microwaved bacon, crumbled

Layer lettuce, celery, green pepper, onion, peas, chestnuts and radishes in large salad bowl. Spread mayonnaise or salad dressing over top, sealing completely. Cover and refrigerate for 24 hours. Then sprinkle with grated Parmesan cheese and bacon. Toss before serving. Serves 12 people.
