KEY LIME JELLY 
1 c. lime juice, strained
2 c. water
4 2/3 c. sugar
5 oz. liquid pectin

Combine juice, water and sugar in large kettle and bring to boil. Add pectin and bring back to boil. Boil for 1 minute. Remove from heat.

Skim top.

Ladle into hot sterile jars and seal.
