BROCCOLI CHEESE CORNBREAD 
1 stick butter
2 pkg. Jiffy cornbread mix
4 eggs
1 (10 oz.) pkg. cottage cheese
1 pkg. frozen chopped broccoli, thawed
1 med. onion, chopped
1/2 bell pepper, chopped
1 can whole kernel corn, drained

Saute onion and bell pepper in butter. Set aside to cool. Mix together eggs, cottage cheese, broccoli, corn and cornbread mix. Bake for 30 minutes in a greased glass pan at 425 degrees.

You may also add any of the following: Chopped jalapenos, 1/2 cup grated cheese and 1/2 cup Parmesan cheese.
