1 to 2 tbsp. butter
1/2 c. smoked ham, diced very fine
1/2 c. green peppers, diced very fine
1/2 c. onion, diced very fine
2 tbsp. milk
Salt and pepper to taste
Cheddar cheese, grated or sliced thin
Melt butter in medium skillet; saute ham, peppers and onions until vegetables are tender; set aside. Heat omelet pan or skillet. Add small amount of butter; coat bottom and sides of pan. Beat eggs, milk, salt and pepper until blended. Pour into omelet pan and cook until eggs are set. Spoon ham mixture over center of omelet and fold over, envelope style to hold in filling.
Transfer to serving plate. Top with cheese and heat until cheese is melted (can be done in the oven or in the microwave). Serve as breakfast, brunch or a light dinner.
