SALMON CEREAL LOAF 
1 lb. can salmon
1 tbsp. lemon juice
2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1/2 tsp. salt
2 eggs, beaten
2 tbsp. minced parsley
1 c. quick oatmeal

Drain, bone and flake the salmon and sprinkle with lemon juice. Melt butter in saucepan, add flour and stir until smooth. Add milk all at once and cook, stirring constantly until thickened. Season with salt and combine with salmon, beaten egg, minced parsley and oatmeal. Bake in a well greased loaf pan in moderate oven at 350 degrees for 30 minutes.
