8 boned & skinned chicken breast halves
1/2 c. flour
1 tsp. salt
1/4 tsp. freshly ground pepper
1/4 c. olive oil
2 cloves garlic, minced
1 1/2 c. onion, sliced
1 green pepper, sliced
2 c. mushrooms, sliced
2 tsp. oregano
10 cherry tomatoes, or 3 whole tomatoes, sliced

Preheat oven to 375 degrees. Grease a shallow baking pan with butter. Cut each chicken breast into 4 pieces. Coat chicken by shaking in a plastic bag with flour, salt and pepper. Place chicken in baking pan and grind additional pepper over it.

In a large skillet, saute garlic and onion in oil until soft. Stir in green pepper, mushrooms and oregano; cook 1 minute. Add tomatoes. Pour vegetables over chicken and bake for 45 minutes or until chicken is fully cooked. Serves 8.
