CARROT ZUCCHINI COOKIES 
3/4 c. shortening, soft
1 c. brown sugar
1 egg
1/2 c. raw carrots, grated
1/2 c. raw zucchini, grated
1 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. cinnamon
1/4 tsp. cloves
2 1/4 c. flour
1 c. nuts

Mix together thoroughly shortening, sugar and egg. Stir in carrots and zucchini. Sift together flour, baking powder, baking soda, salt and spices and stir into shortening mixture. Mix in nuts. Drop by teaspoonfuls onto greased cookie sheets. Bake 10 - 12 minutes in a 375 degree oven. Makes 4 dozen.
