|HOMEMADE BEEF HASH|
1 c. beef broth or gravy
2 c. shredded raw potatoes
1 lg. onion, diced
2 1/2 c. diced cooked roast beef
Salt & pepper to taste
2 tbsp. bacon drippings (may use butter)
Combine broth, potatoes, onion, beef and seasonings. Add drippings to heavy, ovenproof skillet. Add meat mixture. Cover and simmer 25-30 minutes (until potato and onion are tender and hash is lightly browned underneath). Uncover and place in 350 degree oven 15-20 minutes.
To serve, fold hash in half like an omelet and slide onto a heated platter. Makes 6 servings. Bacon drippings key to true hash.
