To make buns, prepare the dough for Moravian Sugar Cake, following Steps 1 and 2 above, adding 1/2 teaspoon ground nutmeg and 1/2 teaspoon ground mace with first cup of the flour. Continue with Steps 2 and 3, working in enough of the remaining flour to make soft and sticky dough. Scrape into well buttered bowl; butter top of dough. Cover; let rise in warm place, until doubled in bulk, about 1 hour. punch dough down; divide in half. Roll out each half to 1/2 inch thickness on well floured pastry cloth with well floured stockinett, covered rolling pin. Cut into 2 1/2 to 2 3/4 inch rounds with floured cutter. Place on greased cookie sheets, leaving 3 inches between. Cover; let rise in warm place, until doubled in bulk, about 45 minutes. Bake in preheated moderate oven (350 degrees) for 15 minutes until golden brown. Transfer to wire racks. Brush generously with 1/4 cup (1/2 stick) melted unsalted butter. Serve warm or at room temperature as dinner rolls, or use as hamburger buns.
