GRITS AU GRATIN 
3/4 c. Quaker Quick grits
3 c. boiling water
1 tsp. salt
1/4 lb. sharp cheese, thinly sliced
1/2 c. milk
1/2 c. buttered bread crumbs
1/4 tsp. paprika

Stir grits slowly into boiling salted water. Cook 2 1/2 to 5 minutes, stirring occasionally.

Alternate layers of cooked grits and cheese in greased 1 1/2 quart baking dish. Pour milk over top; sprinkle with bread crumbs and paprika. Bake in preheated, slow oven (325 degrees) about 20 minutes. 6 servings. I first had this dish at a Mardi Gras brunch in New Orleans.
