GROUND VEAL IN ACORN SQUASH 
1 lb. ground veal
2 tbsp. bread crumbs
1 tbsp. minced onion
3 acorn squash
1 egg or substitute, beaten
1/2 c. chopped green pepper
Salt and pepper to taste
2 lg. tomatoes, sliced

In a bowl, blend veal, egg, bread crumbs, green pepper and onion. Add salt and pepper. Cut squash in half and scoop out the seeds. Fill each half with meat mixture and top with a tomato slice. Sprinkle with bread crumbs. Arrange on a cookie sheet and cover each squash half with aluminum foil. Bake at 350 degrees for 30 minutes. Uncover and continue baking another 15 minutes or until squash is soft. Serves 6.
