PARSNIP AU GRATIN 
3 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
1 1/2 c. milk
3 c. diced cooked parsnips
1/4 lb. shredded sharp Cheddar cheese
1 c. soft bread crumbs
2 tbsp. melted butter

Melt the 3 tablespoons butter in saucepan. Blend in flour and salt. Gradually add milk and cook, stirring constantly, until thickened. Remove from heat and add parsnips. Pour half the parsnip mixture into buttered shallow 1 1/2 quart casserole. Sprinkle with half of cheese. Repeat layers. Combine bread crumbs and 2 tablespoons melted butter; sprinkle over casserole. Heat oven to 400 degrees. Bake 25-30 minutes or until crumbs are brown. Serves 6- 8.
