ROTKOHL (RED CABBAGE) 
1 head red cabbage, shredded fine
1 onion, chopped
1 apple, cored and diced (do not peel)
2-3 bay leaves
Water to cover slightly
1/2 c. white vinegar
1/2 c. sugar

Cook first 5 ingredients (covered) until tender. Add vinegar and sugar. Simmer at least 5 minutes. Longer is better. This is even better the next day.
