RICE AND GREEN CHILE CASSEROLE 
1 c. sour cream
1 can (4 oz.) chopped green chilies, drained well
3 c. cooked rice
12 oz. Monterey Jack cheese, cut into strips
1/2 c. shredded Cheddar cheese (2 oz.)

Mix sour cream and chilies. Layer 1 cup rice, half the sour cream mixture and half the cheese strips in greased 1 1/2 quart casserole. Repeat layers. Cover with remaining rice. Bake uncovered in 325 degree oven until bubbly, about 30 minutes. Sprinkle with Cheddar cheese. Return to oven until cheese melts. 6 servings.
