RICE VOLCANO 
1 1/2 qt. hot, cooked rice
1/2 c. butter
3/4 c. chopped green onion
1/2 c. chopped green pepper
1/3 c. chopped pimento
Pimento strips if desired
Sprig of watercress or parsley

Toss hot cooked rice with butter, onion, green pepper and pimento. Pile into serving dish in volcano shape. Garnish top with pimento strips and sprigs of green. Yields 6 servings.
