|APPLE - RAISIN OATMEAL BARS|
1 1/2 c. uncooked old-fashioned or quick-cooking oatmeal
1 1/3 c. + 2 tbsp. all-purpose flour
2/3 c. + 2 tbsp. firmly packed light brown sugar
3/4 c. butter, softened
1 lg. apple, pared, cored, and finely chopped (about 1 1/2 c.)
1/3 c. raisins
1/4 tsp. ground cinnamon
1/8 tsp. salt
Preheat oven to 400 degrees. In large bowl combine oatmeal, 1 1/3 cups flour, and 2/3 cup brown sugar. With pastry blender or hands, cut in butter until mixture resembles coarse crumbs. Set aside 1 cup of oatmeal mixture. Pat remaining oatmeal mixture into greased 9x9 inch baking pan.
In small bowl combine apple, raisins, cinnamon, salt, 2 tablespoons flour, and 2 tablespoons brown sugar. Spoon apple mixture evenly over oatmeal mixture in pan, patting down apple. Sprinkle top with remaining oatmeal mixture, patting down gently. Bake 40-45 minutes until golden brown. Let cool in pan. Cut into bars. Yield 18 servings.
