|CHERRY COCONUT BARS|
1 cup flour
1/2 cup butter
3 tablespoons powdered sugar
Combine flour, butter and sugar, cutting together using a pastry blender or two knives until mixture resembles coarse crumbs. Pat into a 9-inch square pan lightly sprayed with non-stick spray.
Bake at 350°F for 15 - 18 minutes.
2 eggs, slightly beaten
1 cup sugar, scant
1/4 cup flour
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup red maraschino cherries, drained and cut in quarters
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
Mix filling ingredients well and spread evenly over hot crust. Bake at 350°F for 25 minutes.
When cool, cut into 1-inch squares. Store in an airtight container.
Note: Canned cherry pie filling may be substituted.
Makes 36 bars.
