APPLESAUCE MEATBALLS 
1 lb. ground beef (or turkey)
1 egg
1/2 c. chopped onion
1/2 c. applesauce
1/2 c. crackers (if needed)
Salt and pepper or Mrs. Dash to taste
1 onion, sliced
2 carrots, sliced
2 celery ribs, sliced
2 zucchini, sliced
1 (24 oz.) can V-8 juice
Spaghetti, cooked

Mix first 6 ingredients. Form into meatballs and brown; set aside.

Par-boil vegetables 5 minutes. Arrange meatballs in 13x9 pan. Place vegetables over meatballs, evenly. Pour V-8 juice over mixture. Bake in 350 degree oven for 25-30 minutes or microwave until meatballs are done. Serve over spaghetti and sprinkle with Parmesan cheese.
