BROCCOLI CORNBREAD 
1 (10 oz.) pkg. chopped broccoli
4 eggs
1 med. onion
1 (6 oz.) low fat cottage cheese
1/2 c. butter
1 box Jiffy corn muffin mix

Drain thawed broccoli, beat eggs, chop onion well. Melt butter, spread a 9 x 11 inch pan with Pam. Mix all ingredients adding corn muffin mix last. Spread evenly in pan. Bake at 400 degrees for 25 to 30 minutes.
