KIWI FRUIT MUFFINS 
2 c. all-purpose flour
1 tbsp. baking powder
3/4 tsp. salt
1/3 c. sugar
1/4 tsp. cinnamon
1 egg, slightly beaten
1 c. milk
1/4 c. vegetable oil
2/3 c. kiwi fruit, chopped

Combine first 5 ingredients in a large bowl. Set aside. Combine egg, milk, and oil; add to dry mixture. Stir just until dry ingredients are moistened. Add chopped kiwi fruit and stir until blended. Spoon batter evenly into greased muffin pans, filling 3/4 full. Bake at 400 degrees for 20 minutes. Yield 1 dozen.
