RHODE ISLAND CLAM CAKES 
3 eggs
1 pt. chopped clams or ground quahogs
1 1/2 c. milk
1/2 c. clam juice (or milk)
6 tsp. baking powder
1 tsp. salt
1/4 tsp. pepper
2 tbsp. sugar
4 c. flour
Oil for frying

Mix eggs, clams and liquid (you may use milk plus clam juice, or all milk). Sift dry ingredients together and mix with the clam mixture. Drop by tablespoons into hot grease, a few at a time. They're done when they float to the top and brown all over. Drain on paper towels.
