ZUCCHINI MARMALADE 
6 c. peeled and shredded zucchini (use sm. zucchini)
5 c. sugar
1/2 c. lemon juice (can be ReaLemon juice)
1 c. crushed pineapple, undrained, in heavy syrup
1 lg. pkg. (6 oz.) peach or apricot Jello

Bring zucchini to boil for 15 minutes, stirring continuously. Remove from heat; add sugar, lemon juice, and pineapple; return to heat. Cook 6 minutes. Add Jello and stir. Put into hot jars. Seal with wax. Any odd jars can be used.
