SNACK CAKE QUICK AND EASY - NO EGGS! 
1 2/3 c. flour
1 c. brown sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1/3 c. oil
1 c. water
1 tsp. vinegar
1/2 tsp. vanilla

Mix in 8 x 8 x 2 inch pan flour, brown sugar, cocoa, baking soda and salt. Then add and stir together oil, water, vinegar and vanilla. Bake at 350 degrees for 35 to 40 minutes.

Variations: Omit cocoa. Sprinkle 1/2 cup semi sweet chocolate chips over batter in pan.

Maple Nut: Omit cocoa. Add 1/2 cup chopped pecans and 1/2 teaspoon maple extract.

Applesauce: Omit cocoa and vanilla. Add 1/2 teaspoon allspice to flour reduce water to 1/2 cup. Add 1/2 cup applesauce.

Chocolate-Cherry: Omit water and add: 1/2 cup chopped almonds, drain 1 small jar maraschino cherries, chopped measure syrup and add water to make one cup liquid.
