LEMON TAPIOCA 
1/2 c. Minute tapioca
1 qt. water
Pinch of salt
1/2 c. sugar
1 lemon, rind and juice
2 bananas

Boil tapioca, water and salt together until clear. Remove from heat, add sugar and lemon rind and juice. Mix well. Refrigerate until cool. When cool, add sliced bananas. Return to refrigerator.
