FRIED CATFISH 
2 lb. pan dressed catfish
1/2 c. cornmeal
1/2 c. all-purpose flour
1 tsp. salt, optional
1/4 tsp. pepper
1 egg
1 tbsp. water
Vegetable oil

If fish fillets are large, cut into serving size pieces. Combine cornmeal, flour, salt and pepper. Beat egg and water until blended. Dip fish in egg mixture and then coat again in cornmeal mixture.

Heat vegetable oil (1/2 inch) in skillet until hot. Fry fish in hot oil over medium heat, turning fish carefully, until brown on both sides, about 10 minutes.
