BATTERED CHICKEN 
1 chicken, cut into eighths
1 1/2 c. flour
1 tbsp. garlic
1 1/2 tsp. pepper
1 1/2 tsp. paprika
1/4 tsp. poultry seasoning
2/3 c. flour
1/8 tsp. pepper
1 beaten egg yolk
3/4 c. water or flat beer

In large bowl, mix 1 1/2 cups flour, garlic, pepper, paprika and poultry seasoning. In another bowl mix 2/3 cup flour, pepper, egg yolk and beer (water). Coat chicken pieces first in flour mixture and then into wet batter and then back in flour mixture. When all chicken pieces have been coated, fry in large frying pan in oil, 2 inches deep. Fry until golden brown. Place in baking dish. Bake in oven, uncovered at 350 degrees for 1 to 1 1/2 hours. Serves 4-5.
